It is the most harmful type of fat you can eat. Hy-drogenated fats like margarine and shortening are unsaturated fats that are made to be more solid at room temperature. Trans-fatty acids are produced when fats are hydrogenated. They can, however, raise HDL cholesterol (the good kind of cholesterol) levels.
They are liquid at room temperature and can reduce blood cholesterol levels, but they're not as effective as polyunsaturated fats. Monounsaturated fats such as olive oil are mainly found in foods that come from plants. Eating polyunsaturated fat can reduce blood cholesterol levels. They are liquid at room temperature. Polyunsaturated fats come mainly from plants. Unsaturated fats (polyunsaturated and monounsaturated) have less of an effect on elevating blood cholesterol levels than saturated fats. (However, see below for a discussion of why coconut oil may not act the same way as other saturated fats.)
