Bison comes in the same cuts as beef - ground, steaks, roasts. If your local butcher doesn't carry bison, it can be ordered on the Internet and shipped frozen to you. (Due to bison's low fat content, it cooks faster than higher-fat-content meats.) If cooking a bison roast, use a 300-degree oven. If cooking bison stew meat, use your slow cooker or crock pot. Do not use high temperatures when cooking bison. Bison has a few considerations - because it's so lean, it can get dry and tough if you don't cook it gendy. Because bison is a dense meat, it tends to satisfy you more with less. Nutritionally, it provides more protein and nutrients with fewer calories and less fat. It tastes great, it's healthier than most other meats, and it satisfies my beef craving.
Why? Less mess. And you don't have to pull the skin off of it like you do chicken. Pork is quite lean now and cooks the same as chicken. So, without any other changes to the recipe, substitute pork loin. Just can't do it. Won't go. Jim McCauley says, I love chicken, but there are days I just can't put another piece of chicken in my body. Any cuts from the loin - like pork chops and pork roast - are actually leaner than skinless chicken thigh, according to U.S. Department of Agriculture data. Pork is lower in fat, calories, and cholesterol than many other meats and poultry.
So I started eating bison. My cholesterol would go through the roof. It's not healthy. I know that I can't have it every day. Jim McCauley, who created the recipes for this article, admits that he is a card-carrying carnivore - a true red meat lover. It's slightly higher in fat but not significantly. Pork tenderloin (or loin) is lower in calories than chicken and lower in cholesterol. While we're on the topic of meat, let's look at pork loin. They're absolutely delicious, and one burger with a salad fills me up for hours.
Two minutes in the microwave, and they're ready. I, too, am a red meat fanatic, and lazy cook that I am, I was delighted to find that my local Trader Joe's market has precooked bison burger patties. I didn't try bison until Jim kept recommending it. He says it satisfies his hamburger craving. Jim also loves bison burgers.
